Maheux Chicken

Or Chicken Maheux. In other words, a chicken dish I made up all on my own.

[I missed posting over the weekend. I was too busy watching Veronica Mars and not internetting. And I decided to not punk out. Back on track this week.]

I neglected to take a picture, when I eat some of the leftovers, I’ll have to make sure to share a pic. This dish is very rich and filling.

Maheux Chicken

Ingredients:
1 package sliced Mushrooms
1 large Green Pepper – chopped
1 large Red Pepper – chopped
Marie’s Chunky Blue Cheese Dressing 12 oz jar*
curry powder – to taste
Basil – to taste
Chicken Breast 1.5-2 lbs – sliced in strips
Minced Garlic – several teaspoons
2 14.5 oz cans of diced tomatoes
Salt (scant)
Pepper

Note: I usually don’t measure, so all spices are added to taste

1. Preheat oven to 350 degrees
2. Slice/chop up mushrooms, green and red peppers
3. Slice chicken into 1″ strips
4. Layer 1/2 of vegetables in the bottom of a 3 quart rectangle pan. Top with 1/2 of the jar of Blue Cheese dressing, and liberally sprinkle curry powder and basil on top.
5. Place the chicken over the first layer
6. Repeat step 4 with the remaining vegetables and Blue Cheese dressing, also liberally sprinkling curry powder and basil
7. Sprinkle several teaspoons of garlic on top
8. Pour diced tomatoes (use the whole can) on top for last layer, salt and pepper to taste
9. Cook at 350 degrees until done (very bubbly, could take up to 1.5 hours)
10. Serve over rice**. Serves 8-10***

*You must use Marie’s Chunky Blue Cheese Dressing – they are not paying me to say this, it’s just that the whole recipe is built on it.
**6 cups of cooked rice (2 cups uncooked) – your preference, brown or white.
***When I make this for just me and my husband I’m able to have dinner and then package up 6-8 lunches to throw in the freezer.

Amused

We didn’t have hot water yesterday morning. Because of this, I did not take a shower.

Edmund contacted our landlord to let him know, and he called the plumber to come in to look at the hot water heater. We were all hoping it was something like a blown out pilot light.

Some context, especially to you Mainers who do all your own repairing and stuff: my landlord is blind, and his wife is not handy. So that is why he couldn’t check the pilot light himself.

Anyway, come to find out, this is what happened: When the landlord was putting away his Christmas Tree, he accidentally turned down the temperature on the hot water heater. The plumber simply turned it back up and we were in hot water within the hour.

When I heard what happened, I was very amused. And I want to share it with you. My amusement. Like how does that happen? A fake Christmas tree turning down the hot water. Hilarious.

This morning, the first thing I did was take a shower. The water was SO HOT! Deliciously so.

DadMy Dad would’ve been 70 years old today.

Mom and I are getting together tonight for dinner in his honor. As Dad would say whenever he’d eat a home-cooked meal: “It don’t get no better”.

I miss him.

Shopping with Mom

I never got the hang of shopping. You know, when you go from store to store, checking out the goods just to see what’s what.

When I go shopping it is usually because I need something. Sure, sometimes I browse while shopping,  but when I am at the store I have an agenda to purchase something.

Today I had a list of stuff I needed to get. So I invited my Mom to come with me.

You see, my Mom loves shopping. Weird,  huh? She jokes (today even) that I was switched at birth.

When I am done shopping I am usually ready to go. I don’t mind waiting,  especially if I have a book. But I’ll do said waiting in the car.

Oftentimes when Ed and I are together and we only need a few things,  I’ll convince Edmund to go in without me. Again I wait in the car. That totally works for me.

Ok, falling asleep while writing this.  Time for bed.

We left the house

Edmund and I left the house today! We ate some Indian food and visited our pal Pat, showing her how to play Dominion.

I had to hired someone to take care of my dad that is a little bit older to be left alone, so I got this contact form for one of the best home care assistance to watch him for the hours we will not be there, but now we back at home. Hanging with the kitties and my dad.

It was so bright today, with the sun reflecting on the snow, I wish I had worn my contacts so I could wear sunglasses.  I had a hard time seeing. Especially when we first left the house, my glasses had a film of stuff on the lenses, much better after I cleaned them.

I am tired and I want to read more.

That is all.

I opened the door to my office

And then closed it again, almost right away.

In a catch-22 holding pattern with my office. Temperature outside is around 0° F. My office is unheated. I have a space heater, but I need to clean a little before I could use it.

So I go back into the living room and sit next to the heat. And read on my Kindle or something. (I am on the 16th book since Monday. )

Eventually I will tire of reading. If I start watching shows on Amazon Prime I hope I remember that I can watch the shows in my office while cleaning.

Reading Glut

On my 13th book since Monday. The time is melding together. I can’t remember what I read when.

Should be doing many things. Instead I’m reading.

Yesterday I took time out from my reading/naptime to wsh out the kitchen garbage can. With soap AND bleach. 

Today I threw caution to the wind and took a shower.

I am avoiding cleaning my office.  I would blame Edmund as he is sleeping in the next room, so I have the perfect I-don’t-want-to-disturb-him excuse ready. But that is not fair. He would likely not be disturbed. Or I could manage NOT to disturb him.

What I should do is go bed soon and get up early to clean office.  (I am on vacation for the rest of the week, and will be home tomorrow.)

I will continue to read the current book I am reading. I will consider moving to bedroom, which might help me go to bed sooner.

Which will be fine if I can resist starting book 14.

Books and Naps

First day of the new year was with reading books and taking naps.

So there.
